The humble leek is often overlooked and likely an unpopular ingredient in your kitchen, but with the right technique, this vegetable can become a showstopping dish. Inspired by the method used for a classic dessert, this unexpected approach transforms leeks into a caramelised, tender, and surprisingly delicious meal.
A chef at Tasty UK said that Leeks Tarte Tatin is a next-level way of cooking the green vegetable. Captioning their TikTok video, Tasty UK boasted: "This leek tarte tatin is your new savoury obsession! Caramelised leeks + golden puff pastry = unreal flavour. Perfect for brunch, dinner, or showing off."

Ingredients- Three large leeks
- Butter (enough to cover the pan)
- One tablespoon of brown sugar (or one tablespoon of honey)
- One sheet of ready-made puff pastry
- Salt to taste
- Garlic to taste
- One egg
- Thyme (enough to season and garnish)
- Balsamic vinegar (two tablespoons)
- Feta cheese (50g)
Begin making this recipe by chopping up three large leeks and discarding the head and the tail of the vegetable to get perfectly even and round cylinders.
Next, melt down a generous amount of butter and brown sugar in a large pan.
Place the leeks in the pan, standing upwards (not lying flat on their side). Then season with salt, garlic (grated on top) and thyme.
In the video, the chef then poured a liquid over it. According to a food expert at La Cuisine Degeraldine, this recipe calls for Balsamic vinegar to help caramelise the leeks and give them a tangy touch.
The Tasty Chef then went on to say, "On a low heat, sear and cook your leeks until golden and gorgeous. Then add a little bit of cheese and top it with ready-made puff pastry."
Poke holes into the puff pastry before giving it an egg wash.
The La Cuisine Degeraldine chef said they use shortcrust pastry instead for a crisp texture. They also suggested, for an extra layer of flavour, try adding a pinch of dried thyme to the dough.
Next, place the pan in the oven and bake (at 180C or 160C fan) until "buffed and golden."
To finish, turn the pan upside down on a plate and then sprinkle cheese over it and thyme to garnish.
